Key Responsibilities
- Assist the Executive Chef in overseeing all aspects of kitchen operations across multiple dining venues, including buffet service, a la carte restaurants, bars, and banquet catering
- Lead and supervise the culinary brigade during service, ensuring optimal organization, timing, and quality control for every dish that leaves the kitchen
- Develop and execute diverse menus that showcase international specialties, local Quebec ingredients, and seasonal offerings that align with Club Med’s premium all-inclusive standards
- Manage food preparation, cooking, and plating standards to ensure consistency, presentation excellence, and adherence to portion control and cost guidelines
- Oversee inventory management, including receiving, storing, and rotating stock, while minimizing waste and controlling food costs within budget parameters
- Ensure strict compliance with food safety and sanitation protocols, including HACCP standards, temperature controls, and hygiene practices across all kitchen stations
- Train, mentor, and develop kitchen team members, including Demi Chefs de Partie, Commis, and Kitchen Assistants, fostering a culture of excellence and continuous improvement
- Coordinate with the pastry team, butchery, and other specialized kitchen sections to ensure seamless integration of all culinary offerings
- Participate in special events, themed dinners, show cooking demonstrations, and festive culinary experiences that enhance the guest vacation experience
- Conduct regular kitchen inspections, equipment maintenance checks, and cleanliness audits to maintain a safe, efficient, and professional working environment
- Collaborate with front-of-house teams, restaurant managers, and guest services to address dietary restrictions, allergies, and special requests with creativity and care
- Contribute to menu innovation, recipe development, and culinary trend research to keep Club Med’s dining offerings fresh, exciting, and globally relevant
Qualifications & Skills
Required Qualifications
- 3-5 years of professional experience in a high-volume restaurant, hotel, or resort kitchen environment
- Proven experience in a supervisory or leadership role within a culinary brigade, demonstrating ability to manage and motivate a team
- Strong foundation in classical and contemporary cooking techniques across multiple cuisines
- Comprehensive knowledge of food safety standards, HACCP protocols, and sanitation regulations
- Ability to work efficiently under pressure during peak service periods, including breakfast, lunch, dinner, and special events
- Physical stamina to stand for extended periods, lift up to 50 lbs, and work in hot, fast-paced kitchen environments
- Flexibility to work various shifts, including early mornings, late evenings, weekends, and holidays, with seasonal peak demands
- Legal eligibility to work in Canada; bilingual proficiency in English and French is highly valued for the Quebec location
Preferred Skills
- Culinary diploma, degree, or equivalent professional certification from a recognized culinary institution
- Previous experience in all-inclusive resorts, hotels, or large-scale catering operations
- Experience with buffet presentation, live cooking stations, and banquet service for large groups
