Fairmont Palliser, one of Canada’s leading luxury hotels, is seeking a highly skilled and dynamic Chef/Executive Chef to joint our esteemed team. As the Chef/Executive Chef at Fairmont Palliser, you will be responsible for overseeing all aspects of our culinary operations. You will have the opportunity to work in a state-of-the-art kitchen, leading a team of passionate and dedicated culinary professionals.
Responsibilities:
- Culinary Leadership: Create and execute innovative menus that reflect our commitment to exceptional quality and taste. Lead by example and inspire the culinary team to consistently deliver outstanding dining experiences.
- Menu Planning: Collaborate with the Food and Beverage team to develop seasonal menus that cater to the diverse tastes of our guests while ensuring profitability and cost control.
- Culinary Standards: Maintain high standards of food preparation, presentation, and hygiene to meet or exceed guest expectations. Implement and enforce all food safety regulations and best practices.
- Team Management: Recruit, train, mentor, and motivate a talented team of chefs, cooks, and kitchen staff. Foster a positive working environment where creativity flourishes, teamwork is valued, and professional growth is encouraged.
- Vendor Relationships: Build strong relationships with local suppliers to source the finest ingredients available in the market. Ensure consistent quality by conducting regular inspections of incoming goods.
- Financial Management: Work closely with General Manager and Finance department to develop annual budgets, monitor costs, control expenses, maximize revenue opportunities, and achieve financial goals.
Requirements:
- Proven Experience: Minimum of 5 years experience as a Chef or Executive Chef in a high-volume restaurant or luxury hotel environment.
- Culinary Excellence: Demonstrated skill in creating innovative menus that showcase international cuisines and local flavors. A strong command of culinary techniques and trends is essential.
- Leadership Abilities: Exceptional leadership skills with the ability to inspire and motivate a diverse team. Proven experience in training, developing, and mentoring culinary professionals.
- Food Safety Knowledge: Thorough understanding of food safety regulations, HACCP principles, and health department standards. Certification in food safety will be highly regarded.
- Creativity and Passion: A true culinary artist with a passion for creating extraordinary dining experiences. Ability to think outside the box while maintaining profitability.
- Flexibility: Must be able to work a flexible schedule including evenings, weekends, and holidays as required by the business demands.
